Cookbook Review: The Vegan Instant Pot Cookbook by Nisha Vora

So if there are three things we love they are vegan food, the instant pot, and pictures of food. Luckily for us we found The Vegan Instant Pot Cookbook which combines all three! We discovered the book through Instagram and have since made about 7 recipes from it. Not only does this book contain some tasty food but it is full of lovely pictures and lots of advice on the best way to use your instant pot. This book is a winner in our eyes!

This book is organized into various sections and each section has at least 9 recipes. In fact some recipes have secondary recipes within them. The recipes range from staples, sides, main courses, breakfasts, desserts, and more. Since the main cooking vessel is the instant pot the recipes aren’t super complex and, from what we’ve tried, pack a lot of flavor!

Mac and Cheese

We have made a few breakfasts, a sauce, some comfort foods, and a dessert. They were all great. No recipe took too long to make and most of them had ingredients we had on hand. We have made meals on busy nights and not so busy nights. It really seems to be a cookbook for anyone and any occasion.

Lasagna

Not everything about this book is ideal though. We did find that the listing of ingredients at the start of the recipe sometimes seemed confusing in the actual steps of the recipe. Reading the entire recipe through before you start is recommended for sure. If you miss a step or did something in the wrong order it’s pretty tricky to adjust a recipe in an instant pot! Still, it’s not really the cookbooks fault that Jon doesn’t always read.

Tofu Cauliflower Tikka Masala

As you can tell we are really liking this cookbook. It has great pictures. Even though ours don’t quite look like the book they certainly tasted like they could have been the pictures in the book. There are nice cooking time charts for various things you may want make in your instant pot which is super helpful. Even the text at the start of recipes (which we know most people skip) are helpful and informative. We would recommend this book to anyone just as much as we’d recommend an instant pot to anyone. Do yourself a favor and get both!
